Head Baker
(Full-time)

We are seeking an experienced and creative Head Baker to join our team and help launch an exciting new concept. This role is a unique opportunity for a passionate pastry professional to lead the setup of the bakery, develop high quality Hong Kong baked goods, and manage day-to-day bakery operations.

Job responsibility:

  • Product Development:

    • Create and innovate new pastry and dessert recipes 

    • Develop seasonal and specialty items true to the Hong Kong flavours

    • Experiment with flavors, ingredients, and presentation to ensure a diverse, high-quality product offering.

    • Test, refine, and document recipes to ensure consistency in production.

  • Bakery Setup & Operations:

    • Work closely with the management team to oversee the bakery setup, including layout planning, equipment selection, and supplier coordination.

    • Develop standard operating procedures (SOPs) for production, ingredient handling, and kitchen organisation.

    • Ensure compliance with health and safety regulations and maintain cleanliness in the bakery at all times.

    • Establish an efficient workflow for the bakery to ensure timely production and minimize waste.

  • Team Management & Training:

    • Train and supervise bakers and kitchen assistants to meet the bakery’s operation needs. 

    • Provide ongoing training in pastry techniques, ingredient handling, and presentation to maintain high standards.

    • Develop staff schedules, oversee shift operations, and manage performance reviews.

    • Foster a positive, collaborative work environment and encourage team development.

  • Inventory & Cost Management:

    • Manage ingredient sourcing and inventory.

    • Manage costs and wastage

  • Quality Control & Customer Satisfaction:

    • Oversee all aspects of production and quality control

    • Address any customer feedback or concerns promptly and professionally to maintain a high level of customer satisfaction.

    • Stay updated on industry trends and customer preferences to continuously improve the bakery’s offerings.

Requirements:

  • Minimum of 3 years of experience in a professional pastry kitchen

  • Experience in Asian bakery is a plus. 

  • Strong leadership and team management skills, with experience in training and developing staff.

  • Excellent organizational and time-management skills

  • Understanding of food cost control, budgeting, and inventory management.

  • Exceptional attention to detail and creativity in product presentation.

  • Knowledge of health, safety, and sanitation regulations in food production.

  • A positive attitude and commitment to working as team to deliver results
